2/3 - Cup Sugar |

2 - Tablespoons Salt |

2 - Tablespoons Pickling Spice |

1 - Medium Onion Chopped |

White Vinegar |
Cube Northern fillets, packing firmly in quart jars to 2/3 to 3/4 full. Add chopped onion, Salt, Pickling Spice, and Sugar pour vinegar over the works to fill jar. Cover and seal, shake vigorously. Refrigerate, shaking well daily for the first 7 - 10 days. Ready to eat in about 10 - 14 days, depending upon size of the fish, and thus size of the bones. Keeps well for several months in the refrigerator.
*** Pickling spice is a bit of a pain to pick off the fish when eating, if anyone out there's got suggestions to avoid this problem please forward them.
