1 1/2 - Pounds boneless Walleye Fillets - Cut in 1 inch Cubes |

1/2 - Medium Onion - Chopped |

1/2 - Large Green Pepper - Chopped |

1/2 - Large Red Pepper - Chopped |

1/2 - Stick Margarine |
|
2 - Tablespoons Lemon Juice |
|
1 - Box Rice-a-Roni Fried Rice |
|
Cajun (or other Seasoning Salt) |
|
Black Pepper |
Start Rice-a-Roni per directions on box. In separate skillet, melt butter over medium-high burner, add lemon juice and Chopped Onion and Pepper. Cover and Sauté 4 - 5 minutes stirring occasionally. Stir in cubed Walleye, seasoning to taste. Cook until fish is opaque add Rice-a-Roni and cook until rice is done.
Total preparation and cooking time - about 1/2 hour.
